Hot Cross Buns

I do so enjoy making bread, and to celebrate this warm, sunny day I thought I’d go all seasonal and get a batch of hot cross buns on Kamado Joe, writes Sandra Tate…

Stage onethe sweet bread dough
In a large bowl, lightly mix together 500g strong white bread flour with 75g unrefined caster sugar and 2 tsp salt. Make a well in the hotxbunsmixcentre and sprinkle in 10g of dried yeast. Mix 125ml of tepid water with 125ml tepid full fat milk and pour over the yeast. Leave to stand for 5 minutes until bubbling on the surface then add 2 large eggs, beaten. Bring the mixture together then turn out onto a clean surface and knead to a smooth, elastic dough (about 8-10 minutes). Form into a ball and return to the bowl, cover with cling film and leave to rise in a warm place for 1-2 hours or until doubled in size.

In a small bowl mix 150g sultanas together with 75g mixed peel, 1 tsp of ground cinnamon, 1 tsp freshly grated nutmeg, and the finely grated zest of half an orange and half a lemon. Scrape the risen sweet dough out of the bowl onto a floured surface and allow it to relax, spreading it out a little, and spread the fruit and spice mix over. Now bring together and lightly knead back into a ball. Place in the bowl, cover and allow to rise for a further hour.

Time to get Kamado Joe up and running – light up the charcoal, place heat deflector at low level and the grill rack at high level. Aim to settle the temperature at a steady 220°C.hotxbunsonjoe
Meanwhile, scrape the risen dough onto a floured surface and divide into 12, forming each piece of dough into a neat ball. Have a pizza stone ready with parchment on it and a dusting of flour. Arrange the balls about a centimeter apart and then leave in a warm place for half an hour to rise again. As they rise, mix together 70g plain white flour with 70g water into a paste and place in a piping bag with a ribbon nozzle. Pipe the crosses onto the risen buns the transfer to Kamado Joe for 20 minutes or until risen ans golden brown. Enjoy the delicious aroma of fruit and spice as you lift the lid!
